Healthy Banana Raisin Muffins


Ingredients:
  • 1 1/4 cups whole wheat flour
  • 3/4 cup all-purpose flour
  • 2 tablespoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 2 cups bananas, mashed
  • 1/2 cup sugar
  • 1/2 cup , 1 tablespoon applesauce 
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cups raisins
Directions:
  1. Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners. 
  2. Mix together flour, baking powder, baking soda and salt. In a separate bowl, beat together banana, sugar, egg and vanilla. Stir in the applesauce and vanilla. Stir banana mixture into flour until just combined. Add raisins. Scoop batter into prepared muffin cups.
  3. Bake in preheated oven for 15 to 20 minutes, or until a toothpick inserted into center of a muffin comes out clean. Let cool before serving. For best flavor, place in an airtight container or bag overnight.
